This weekend we are headed back to my hometown for two weddings. I am so excited for both of these couples! Oh young love! I had a list of to-do’s that I wanted to get done last night before we get on the road after work. And of course one of those to-do’s was to bake. I mean it is Thursday after all. It’s funny how certain traditions or habits form after a while. Last winter when I kicked the baking up a notch, for some reason it was always on Thursday nights. I would come home from work, pour myself a BIG glass of wine, turn on the Christmas music (which is not far away - i’m one of the crazies that starts listening to it Nov 1st ), and start baking. I always and still do look forward to Thursday nights. It really is the start of the weekend in my eyes.
I am always intrigued by new and different ways to make any type of dessert…especially if it’s healthy. This recipe was the perfect fit for my night. Quick, easy and healthy. These little brownie batter bites remind me of Larabars but so much better because I get to control the ingredients. If you haven’t tried these fruit and nut bars yet, I highly recommend that you do. My favorites are Cherry Pie, Apple Pie, and Banana Bread. You will be shocked at list of ingredients or lack thereof for that matter. I think the most I’ve seen is 6 in the apple pie. The other nice thing about making these at home is they are cheap and versatile! This batch is rich in chocolate and coffee flavors. And I totally agree with Katie - the more chocolate the better.
Raw Fudgey Coffee Brownies
1/2 cup unsalted cashews
1 1/4 cup pitted dates
4 tbsp cocoa powder
1 tsp vanilla extract
1/2 tsp instant coffee
Chop/Blend all ingredients. I don’t have a big food processor so I did this in steps. I chopped the nuts and set aside. Next, I placed the dates in my mini food processor and chopped/grinded for about 2-3 minutes until they were in small pieces. Add cashews, vanilla, chocolate, and instant coffee. Mix until all ingredients are combined. Roll into irresistable bite size balls. And do not stop eating at just one – well mainly because you don’t have to! Happy Weekend!!
