I had the best day today! I finished MOST of my christmas shopping, got all my presents wrapped, made 2 batches of sweet party mix, and some cookies all while Christmas music was blasting in the background of course. I have to pick up a few more things and I am done!
I hope you aren’t getting sick of all the cookie posts, but these cookies are so festive I couldn’t resist. The specs of deep red and white scattered throughout the cookie is so fun! This recipe reminds me of the roll of dough or break-n-bakes you find at the store. It’s a great one to have on hand and change out the add-in’s depending on the occasion.
White Chocolate Cranberry Cookies
Time: 45-60 min
Ingredients
- 2 1/2 cups flour
- 1 tsp baking powder
- 1/4 baking soda
- 1/8 tsp salt
- 1/2 c butter, room temperature
- 1 1/3 c sugar
- 2 large eggs
- 1/2 cup dried cranberries
- 1/2 cup white chocolate chips
Preheat oven to 350 degrees.
In a separate bowl, whisk together flour, baking powder, salt and baking soda. Set aside.
Beat butter and sugar until well combined. Add in eggs and beat until fluffy. Slowly add in dry ingredients. Stir in cranberries and white chocolate chips.
Drop by tablespoon onto baking sheet lined with parchment paper. Bake for 10-12 minutes. If using a larger scoop, mine took about 16-17 minutes. Let cool on baking sheet for about 2 minutes and transfer to a cooling rack until cooled.
