Happy 2010!! One of my friends made a comment on Facebook that said “I love the promise of a New Year” and I couldn’t agree more! I’m really excited about this year and what’s going to be in store for us. What that is for sure I have no idea…..but I’m sure it will be good. Haha!
My mom has been making this dish for years. I’m not a big egg fan but I love this dish. The sausage (or “fausage”in my case) makes it slightly spicy and cheese makes everything better. This year we added Morningstar Veggie Grillers Crumbles instead of sausage which was good. I think I would opt for the veggie sausage to keep that spicy element. We usually top ours with salsa, mustard, or my dad got really creative this year and added syrup. Savory and sweet….smart guy!
The other nice thing about this dish is that you have to let it sit for atleast a few hours or over night. Which means you won’t be in the kitchen all morning and can spend more time with your guests. Always a bonus! No picture of it on my plate…..I was too excited to eat it. :)
Breakfast “Sausage” Bake
Prep: 30 min
Ingredients
- 12 slices white or wheat bread, cubed
- 9 eggs, beaten
- 3 cups milk
- 1 1/2 tsp salt
- 1 1/2 tsp dry mustard
- 1 1/2 cups shredded cheddar cheese (pepperjack would be good also to spice it up a bit more)
- 1 bag Veggie Crumbles or 1 1/2 lbs sausage
If using real sausage: brown, drain, and cool sausage. In a large mixing bowl, combine beaten eggs and milk. Fold in “sausage” and bread crumbs. Add salt, dry mustard, and cheddar cheese. Pour mixture into 13×9 inch pan. Refrigerate for several hours or overnight. When ready to serve, bake at 350 degrees for 50-60 min.
