This weekend we had no plans – the first time in a couple weeks! We did so much inside and outside the house. I love the feeling of a clean, organized house. The other nice thing about no plans…..I get to spend some much needed time rocking an apron and getting messy in the kitchen.
I’m not a huge fan of cheesecake. The few times that I do eat it, I prefer the slice covered in chocolate or caramel. Now Brent on the other hand LOVES cheesecake. Last week these little cupcake pies came across my email and I immediately forwarded it to him. He had no objections, ofcourse.
After sampling the final product, my appreciation for cheesecake desserts grew a bit. :) The key lime cheesecake is so flavorful and the thick chocolate crust on the bottom was just delicious! I mean really, how can you go wrong with chocolate and melted butter. I had a lot of batter left over after filling the cupcake pans but no crumbly chocolate mixture. Maybe my cupcake pans weren’t jumbo enough?!? Who knows. Definitely won’t stop me from making them again. They would be adorable in mini form too, isn’t everything though!!
Chocolate-KeyLime Cupcake Pies

Ingredients
- 1 (9 oz) package chocolate wafer cookies
- 1/2 cup butter, melted
- 3 (8 oz) packages 1/3 less fat cream cheese, softened
- 1 1/2 cups sugar
- 2 tsp key lime zest
- 1/3 cup fresh key lime juice
- 3 large eggs
- Garnishes: sweetened whipped cream, fresh cherries and blackberries, fresh mint leaves
1. Preheat oven to 350 degrees. Place 12 jumbo-size aluminum foil baking cups in lightly greased muffin pans, and coat with cookie spray.
2. Pulse chocolate wafer cookies in a food processor 8 to 10 times or until finely crushed. Stir together cookie crumbs and butter; firmly press on bottom and two thirds up sides of each baking cup (about 2-3 tbsp crumbs per cup).
3. Beat cream cheese and sugar at medium speed with an electric mixer until blended. Add lime zest and lime juice, beating at low speed until well blended. Add eggs, 1 at a time, beating just until yellow disappears after each addition. Spoon mixture into prepared cups, filling completely full.
4. Bake for 20-22 minutes or until set. Cool in pans on wire racks for 15 minutes. Remove from pans to wire racks, and let cool 15 minutes or until completely cool. Cover and chill for 4 hours. Garnish if desired.
