Last year one of my friends brought some Bailey’s White Chocolate Chip Cookies to work. I was smitten! So of course I asked her for the recipe. A few weeks later, I gave them a try. Well, she didn’t remember how much Bailey’s exactly and told me 1 1/2 cups. Now….I thought that seemed like a lot but at the time had never baked anything with Bailey’s so what did I know. I added in the liqueur and my batter was a soupy mess. After a few modifications, I threw them in the oven hoping for good results. At first glance, they were a delicious looking cookie. But the Bailey’s was so strong I think everyone had a slight buzz just from one! haha!!
Fast forward a year later and those cookies randomly popped into my head. This time I decided to follow a recipe and turn them into a cookie bar. I used semi-sweet chocolate chips but after sampling a piece, I prefer the white chocolate. Both are very good though! I had my sister take them to her office and she said they were a hit!! The best part, they pair perfectly with your morning coffee!

Bailey’s Chocolate Chip Cookie Bars
Recipe from Recipe Zaar
Ingredients
- 1/2 cup butter, room temperature
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1 egg, room temperature
- 1 tsp vanilla extract
- 1/2 cup Bailey’s Irish Cream
- 2 1/4 cup cake flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 pkg (6 oz) bittersweet or white chocolate chips
1. Preheat oven to 375 degrees. Prepare 9×9 or 8×11 inch baking dish. **if using 8×11 pan, baking time will differ**
2. Combine flour, baking soda, and salt in a small bowl. Set aside.
3. In a mixing bowl, beat butter and sugars until smooth and combined. Add egg, vanilla and Bailey’s. Blend well.
4. Add dry mixture to batter slowly until combined. Fold in chocolate chips.
5. Spread evenly in prepared pan. Bake for 30-36 minutes or until golden brown.
