About a month ago I tried a cookie at a local bakery and I knew I wanted to re-create it. It was thick, chewy, and was loaded with fall goodness. So to the web I went, not once but twice, and each time my cookies have turned out like this. :(
I tried refrigerating the dough for an hour and then baking, freezing the balls of dough on the cookie sheet for 30 minutes and then baking, and even froze the dough over night. FAIL! However not a complete failure because the flavor is great! Not to toot my own horn but I think they are even better than the original one I tried, but in no way is this sugary circle thick or chewy. I will not be defeated by you cookie. Because you are way too tasty to move on to the next one. (Yes, I do talk to my baked goods from time to time). Back to the mixer I go…….

Even when a cookie is pictured and looks thick and chewy (I follow the recipe to the tee) they come out flat. I’m assuming it’s the butter!
I do know if you replace shortening for the butter or go half and half that helps but I guess the challenge for me is–When I see a picture of a THICK and chewy cookie followed by the recipe–I want my cookie to turn out just like the picture.
They still look pretty yummy – maybe too much butter?
Here’s a question – are you using a silpat? Sometimes the way the Silpats heat cause the dough to spread more than if you weren’t using them.
OTHERWISE, I would try raising your oven temp 25 degrees and see if that helps to keep them from spreading…

My best guess is it’s a butter issue? Either too soft when you add it to the recipe or maybe too airy after you mix?
Either way…they look good to me!
Could have been too airy. I actually thought the butter might not have been soft enough when I started.
They were still pretty good. Like cooked cookie dough.
